Double Chocolate Chip Cookies (Gluten Free)

If you love soft and chewy cookies, these double chocolate chip cookies are for you! They are made from a mixture of almond flour, cocoa powder, and coconut flour making them paleo and gluten free.

Ingredients

  • 1 cup almond flour
  • ¼ cup cocoa powder
  • 3 tbsp coconut flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • cup + 1 tbsp butter, avocado oil, OR refined coconut oil melted and cooled
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees and line a large cookie sheet with parchment paper.
  • In a medium bowl, add the dry ingredients: almond flour, cocoa powder, coconut flour, baking soda and salt. Mix and set aside.
  • In a large bowl, whisk the wet ingredients: egg, coconut oil (or avocado oil or butter), maple syrup, and vanilla extract. Whisk until smooth.
  • Now pour the dry flour mixture into the wt ingredients and fold just until combined. Then fold in the chocolate chips.
  • Scoop 12 cookies onto the cookie sheet and top with additional flaked sea salt. Bake for 10-12 minutes. Let the cookies cool slightly and enjoy!
