Double Chocolate Chip Cookies (Gluten Free)

- 1 cup almond flour
- ¼ cup cocoa powder
- 3 tbsp coconut flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg
- ⅓ cup + 1 tbsp butter, avocado oil, OR refined coconut oil melted and cooled
- ⅓ cup pure maple syrup
- 1 tsp vanilla extract
- ½ cup chocolate chips
Preheat your oven to 350 degrees and line a large cookie sheet with parchment paper.
In a medium bowl, add the dry ingredients: almond flour, cocoa powder, coconut flour, baking soda and salt. Mix and set aside.
In a large bowl, whisk the wet ingredients: egg, coconut oil (or avocado oil or butter), maple syrup, and vanilla extract. Whisk until smooth.
Now pour the dry flour mixture into the wt ingredients and fold just until combined. Then fold in the chocolate chips.
Scoop 12 cookies onto the cookie sheet and top with additional flaked sea salt. Bake for 10-12 minutes. Let the cookies cool slightly and enjoy!
