Cinnamon Muffins with Streusel Topping (Oat Flour)

The best cinnamon muffins are topped with a delicious streusel topping. They are also made healthy and gluten free with whole grain oat flour! These muffins have a tasty cinnamon cake bottom and a crunchy cinnamon crumble topping.

Ingredients

muffin batter:

  • 2 1/4 cups oat flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup melted coconut oil or applesauce
  • 1/2 cup almond milk
  • 1/2 cup maple syrup

topping:

  • 1 cup oat flour
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon
  • 1/4 cup coconut oil melted

Instructions

  • Preheat your oven to 350 degrees. Grease your muffin tins with cooking spray or line them with muffin liners.
  • First, make your crumble topping by combining the oat flour, coconut sugar, and cinnamon in a small bowl. Then add in the melted coconut oil. Mix and set aside.
  • Next, make your muffin batter. In a medium bowl combine the oat flour, cinnamon, baking powder and baking soda. Mix and set aside.
  • In a large bowl, whisk together the eggs, coconut oil (or applesauce), almond milk and maple syrup. Whisk until combined.
  • Now, pour the dry ingredients into the wet ingredient mixture and fold until combined.
  • Fill up 12 muffin tins with batter and top each muffin with the crumble topping.
  • Bake in preheated over for 18-20 minutes. Let the muffins cool and enjoy!
