Cinnamon Muffins with Streusel Topping (Oat Flour)
The best cinnamon muffins are topped with a delicious streusel topping. They are also made healthy and gluten free with whole grain oat flour! These muffins have a tasty cinnamon cake bottom and a crunchy cinnamon crumble topping.

muffin batter:
- 2 1/4 cups oat flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 eggs
- 2 tsp vanilla
- 1/2 cup melted coconut oil or applesauce
- 1/2 cup almond milk
- 1/2 cup maple syrup
topping:
- 1 cup oat flour
- 1/3 cup coconut sugar
- 1 tsp cinnamon
- 1/4 cup coconut oil melted
Preheat your oven to 350 degrees. Grease your muffin tins with cooking spray or line them with muffin liners.
First, make your crumble topping by combining the oat flour, coconut sugar, and cinnamon in a small bowl. Then add in the melted coconut oil. Mix and set aside.
Next, make your muffin batter. In a medium bowl combine the oat flour, cinnamon, baking powder and baking soda. Mix and set aside.
In a large bowl, whisk together the eggs, coconut oil (or applesauce), almond milk and maple syrup. Whisk until combined.
Now, pour the dry ingredients into the wet ingredient mixture and fold until combined.
Fill up 12 muffin tins with batter and top each muffin with the crumble topping.
Bake in preheated over for 18-20 minutes. Let the muffins cool and enjoy!
