Almond Flour Banana Bread with Almond Butter

Use up your ripe bananas and make this almond flour banana bread. It's both paleo and gluten free as it is made from a mixture almond flour, almond butter and bananas of course. You only need 8 ingredients that you probably already have on hand!

Equipment

  • 3.5x7.5 loaf pan or 4x8 loaf pan

Ingredients

  • 2 cups blanched almond flour
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • 3 eggs
  • 1 cup mashed banana
  • ½ cup creamy almond butter
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Instructions

  • Preheat your oven to 350 degrees. Line a 4x8 loaf pan with parchment paper or grease it with cooking spray.
  • In a medium bowl add the almond flour, cinnamon and baking soda. Mix and set aside.
  • In a large mixing bowl add your eggs, mashed banana, creamy almond butter, vanilla extract and lemon juice. Whisk until fully combined and smooth.
  • Now pour your dry flour mixture into the wet ingredients and fold just until combined. Feel free to add in mix in's now! (chocolate chips, walnuts, and raisins are a few of my favorites).
  • Pour the batter into your prepared loaf pan and bake for 40-45 minutes.
  • Let the loaf cool before slicing. Enjoy!
