Easy Oatmeal Chocolate Chip Almond Butter Cookies

Tasty and chewy oatmeal chocolate chip almond butter cookies. These cookies are made from a mixture of oat flour, rolled oats and almond butter, of course!

Ingredients

  • 1 cup oat flour
  • ½ cup rolled oats
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • ¼ cup almond butter
  • ¼ cup coconut oil melted
  • ¼ cup coconut sugar
  • 3 Tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp lemon juice or apple cider vinegar
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 350 and line your baking sheets with parchment paper. In a large bowl combine the oat flour, rolled oats, baking soda and salt.
  • In a large bowl whisk together the egg, almond butter, coconut oil, coconut sugar, maple syrup, vanilla and lemon juice. Whisk until smooth.
  • Pour dry flour ingredients into the wet mixture and mix with a spoon or spatula just until combined. Then fold in the chocolate chips. You can also fold in another add-ins at this time (walnuts, raisins, etc).
  • Bake in preheated oven for 10-12 minutes. Enjoy!
