Easy Oatmeal Chocolate Chip Almond Butter Cookies
Tasty and chewy oatmeal chocolate chip almond butter cookies. These cookies are made from a mixture of oat flour, rolled oats and almond butter, of course!

- 1 cup oat flour
- ½ cup rolled oats
- ¼ tsp baking soda
- ¼ tsp salt
- 1 egg
- ¼ cup almond butter
- ¼ cup coconut oil melted
- ¼ cup coconut sugar
- 3 Tbsp maple syrup
- 1 tsp vanilla
- 1 tsp lemon juice or apple cider vinegar
- 1/2 cup chocolate chips
Preheat your oven to 350 and line your baking sheets with parchment paper. In a large bowl combine the oat flour, rolled oats, baking soda and salt.
In a large bowl whisk together the egg, almond butter, coconut oil, coconut sugar, maple syrup, vanilla and lemon juice. Whisk until smooth.
Pour dry flour ingredients into the wet mixture and mix with a spoon or spatula just until combined. Then fold in the chocolate chips. You can also fold in another add-ins at this time (walnuts, raisins, etc).
Bake in preheated oven for 10-12 minutes. Enjoy!
