Easy Granola Recipe (With Maple and Walnuts)

This easy granola recipe makes the perfect breakfast or on-the-go snack. Grab a bowl of greek yogurt and top it with some granola and you are good to go!

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped walnuts
  • 1 cup dried cranberries craisins
  • ½ cup shredded coconut
  • ½ cup chocolate chips
  • ¼ cup ground flax seed
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup pure maple syrup
  • cup refined coconut oil melted, or butter
  • 1 tbsp vanilla extract

Instructions

  • Preheat your oven to 300 degrees and line a large baking sheet with parchment paper.
  • In a large bowl add: oats, walnuts, craisins, coconut, chocolate chips, flax seed, coconut sugar, cinnamon and salt. Mix and set aside.
  • In a small bowl add the maple syrup, melted coconut oil and vanilla extract. Whisk until combined.
  • Now pour the whisked wet mixture over all our dry ingredients. Using a spoon or spatula mix until combined and fully coated.
  • Dump granola the mixture onto your prepared baking sheet. Using your spoon, pat it down to form an even layer.
  • Bake for 18 minutes. Turn off the oven and let the pan sit in the oven for an hour. Remove the pan from the oven and let it cool for another hour. You want the granola to cool fully. This helps to make chunky granola!
  • Once the granola has fully cooled, break it up with your hands and enjoy! Store the remaining granola in an airtight container in the fridge for 4-5 days.
