Easy and Healthy Peanut Butter Chocolate Crunch Bars

These healthy peanut butter crunch bars are UH-AMAZING. They are so simple to make and only require 6 ingredients that you probably already have on hand. They are also vegan and dairy free!

Ingredients

Rice crispy layer

  • 2 cups rice krispie cereal
  • ½ cup creamy peanut butter
  • ¼ cup honey or pure maple syrup
  • 2 tbsp coconut oil

Middle layer

  • ¼ cup creamy peanut butter
  • ¼ cup honey or pure maple syrup

Chocolate topping

  • ½ cup chocolate chips melted
  • 1 tbsp coconut oil

Instructions

  • Line an 8x8 pan with parchment paper.
  • First we will make the bottom layer. In a large bowl, add the creamy peanut butter, melted coconut oil, and honey. Mix until fully combined and then stir in the rice krispies.
  • Press the mixture into the bottom of the 8x8 pan in an even layer. Set aside.
  • Now make the middle layer. In a small bowl mix the peanut butter and honey until fully combined. Then spread it on top of the bottom layer.
  • Now make the chocolate topping. In a small bowl, melt the chocolate chips with the remaining tablespoon of coconut oil.
  • Once it is fully melted, pour it on top of the two layers evenly.
  • Place the pan in the fridge for 1-2 hours to set.
  • Remove the crunch bars from the pan. They should pop right out since we used parchment paper! Using a sharp knife slice the bars into squares. Enjoy!
  • Keep the bars stored in the fridge or freezer for the best results.
