Easy and Healthy Peanut Butter Chocolate Crunch Bars
These healthy peanut butter crunch bars are UH-AMAZING. They are so simple to make and only require 6 ingredients that you probably already have on hand. They are also vegan and dairy free!

Rice crispy layer
- 2 cups rice krispie cereal
- ½ cup creamy peanut butter
- ¼ cup honey or pure maple syrup
- 2 tbsp coconut oil
Middle layer
- ¼ cup creamy peanut butter
- ¼ cup honey or pure maple syrup
Chocolate topping
- ½ cup chocolate chips melted
- 1 tbsp coconut oil
Line an 8x8 pan with parchment paper.
First we will make the bottom layer. In a large bowl, add the creamy peanut butter, melted coconut oil, and honey. Mix until fully combined and then stir in the rice krispies.
Press the mixture into the bottom of the 8x8 pan in an even layer. Set aside.
Now make the middle layer. In a small bowl mix the peanut butter and honey until fully combined. Then spread it on top of the bottom layer.
Now make the chocolate topping. In a small bowl, melt the chocolate chips with the remaining tablespoon of coconut oil.
Once it is fully melted, pour it on top of the two layers evenly.
Place the pan in the fridge for 1-2 hours to set.
Remove the crunch bars from the pan. They should pop right out since we used parchment paper! Using a sharp knife slice the bars into squares. Enjoy!
Keep the bars stored in the fridge or freezer for the best results.
