Oat Flour Waffles (Healthy, Gluten Free)

Oat flour waffles make the perfect breakfast treat. They are made with whole grain oat flour, are soft on the inside and slightly crisp on the outside.

Ingredients

  • 1 ¼ cup oat flour finely ground
  • ¼ tsp baking soda
  • 1 egg
  • ¾ cup almond milk
  • 3 tbsp coconut oil OR butter melted and cooled
  • 2 tbsp coconut sugar
  • 1 tsp lemon juice

Instructions

  • In a small bowl add the oat flour and baking soda.
  • In a medium bowl whisk together the egg, almond milk, coconut oil, coconut sugar and lemon juice. Whisk until fully combined.
  • Now, pour the dry flour mixture into the wet ingredients and fold until combined. Set aside.
  • Heat up your mini waffle maker. If needed, spray the waffle maker with cooking spray so the waffles don't stick.
  • Once the waffle maker is ready, scoop the batter onto the waffle maker, about 1-2 spoonfuls. Repeat this process until all the batter is gone.
  • Recipe makes 7 mini waffles. Top the waffles with syrup, bananas, fresh fruit and nut butter. Enjoy!
