Ingredients

Cookie Batter

  • 1 ¼ cup blanched almond flour
  • 1 cup oat flour finely ground
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 egg large
  • cup coconut sugar
  • 5 tbsp butter browned
  • 1 tsp vanilla
  • ½ tsp apple cider vinegar

Candied Pecans

  • 1 cup chopped pecans
  • 1 tbsp butter
  • 1 tbsp coconut sugar

Instructions

  • First, make your browned butter. In a small sauce pan add the butter over medium to low heat. Stirring constantly. Bring the butter to a bowl and keep a close eye on it for browning. You will notice it will start to smell sweet and nutty. Once browned add it to a large mixing bowl to cool.
  • In the same sauce pan, candy the pecans. Add the pecans, butter and coconut sugar over medium to low heat. Cook for 2-3 minutes until fully coated and the butter is melted. Set aside to cool.
  • Now, preheat your oven to 350 degrees. Prepare two baking sheets by lining them with parchment paper.
  • In a medium bowl, add the almond flour, oat flour, baking powder, baking soda and salt. Mix and set aside.
  • Once the browned butter has cooled for about 10 minutes. Add in the egg, coconut sugar, vanilla and apple cider vinegar. Whisk until combined.
  • Now fold in the dry flour ingredients into the wet ingredients. Then fold in the candied pecans.
  • Scoop 18 cookies onto the prepared baking sheets. Bake at 350 for 9-10 minutes.
  • Let the cookies cool slightly before enjoying!
