Cookie Batter
- 1 ¼ cup blanched almond flour
- 1 cup oat flour finely ground
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 egg large
- ⅔ cup coconut sugar
- 5 tbsp butter browned
- 1 tsp vanilla
- ½ tsp apple cider vinegar
Candied Pecans
- 1 cup chopped pecans
- 1 tbsp butter
- 1 tbsp coconut sugar
First, make your browned butter. In a small sauce pan add the butter over medium to low heat. Stirring constantly. Bring the butter to a bowl and keep a close eye on it for browning. You will notice it will start to smell sweet and nutty. Once browned add it to a large mixing bowl to cool.
In the same sauce pan, candy the pecans. Add the pecans, butter and coconut sugar over medium to low heat. Cook for 2-3 minutes until fully coated and the butter is melted. Set aside to cool.
Now, preheat your oven to 350 degrees. Prepare two baking sheets by lining them with parchment paper.
In a medium bowl, add the almond flour, oat flour, baking powder, baking soda and salt. Mix and set aside.
Once the browned butter has cooled for about 10 minutes. Add in the egg, coconut sugar, vanilla and apple cider vinegar. Whisk until combined.
Now fold in the dry flour ingredients into the wet ingredients. Then fold in the candied pecans.
Scoop 18 cookies onto the prepared baking sheets. Bake at 350 for 9-10 minutes.
