Healthy Chocolate Banana Muffins (made with oat flour)

Healthy banana chocolate muffins are made from a mixture of oat flour and cocoa powder. These tasty muffins are so easy to whip up and make the perfect breakfast treat or snack.

Ingredients

  • 1 ½ cup oat flour finely ground
  • cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 eggs large
  • 1 cup mashed banana use ripe bananas
  • ¼ cup avocado oil or coconut oil melted and cooled
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees. Grease 9 muffin tins or line them with baking cups.
  • In a medium bowl add the oat flour, cocoa powder, baking powder and salt. Mix and set aside.
  • In a large bowl add the eggs, mashed banana, avocado oil, maple syrup, and vanilla extract. Whisk until combined.
  • Pour the dry flour mixture into the wet ingredients and fold just until combined. And then fold in the chocolate chips.
  • Scoop the batter into the 9 muffin tins.
  • Bake for 20 minutes. Let muffins cool and then enjoy!
