The Best Healthy S'more Cookies (Gluten Free)

The best healthy s'mores cookies made from a mixture of almond flour and coconut flour. They are loaded with chocolate, graham crackers and marshmallows.

Ingredients

  • 1 ½ cup blanched almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • 1 egg large
  • cup smooth almond butter
  • cup pure maple syrup
  • ¼ cup coconut oil melted and cooled
  • 1 tsp vanilla extract
  • ½ cup chocolate chip chunks
  • ½ cup mini marshmallows
  • ½ cup crushed graham cracker pieces

Instructions

  • Preheat your oven to 350 degrees and line two cookie sheets with parchment paper.
  • In a medium bowl add the almond flour, coconut flour and baking powder. Mix and set aside.
  • In a large bowl add the egg, almond butter, maple syrup, coconut oil, and vanilla. Whisk until fully combined and smooth.
  • Now fold the dry flour mixture into the wet mixture. Fold until just combined.
  • Now fold in the chocolate chunks, mini marshmallows and crushed graham crackers.
  • Scoop the cookies onto the baking sheet. Lightly press them down so they are somewhat flattened (not all the way).
  • Bake at 350 for 10-12 minutes. Let the cookies cool and enjoy!
