The Best Healthy S'more Cookies (Gluten Free)
The best healthy s'mores cookies made from a mixture of almond flour and coconut flour. They are loaded with chocolate, graham crackers and marshmallows.

- 1 ½ cup blanched almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- 1 egg large
- ⅓ cup smooth almond butter
- ⅓ cup pure maple syrup
- ¼ cup coconut oil melted and cooled
- 1 tsp vanilla extract
- ½ cup chocolate chip chunks
- ½ cup mini marshmallows
- ½ cup crushed graham cracker pieces
Preheat your oven to 350 degrees and line two cookie sheets with parchment paper.
In a medium bowl add the almond flour, coconut flour and baking powder. Mix and set aside.
In a large bowl add the egg, almond butter, maple syrup, coconut oil, and vanilla. Whisk until fully combined and smooth.
Now fold the dry flour mixture into the wet mixture. Fold until just combined.
Now fold in the chocolate chunks, mini marshmallows and crushed graham crackers.
Scoop the cookies onto the baking sheet. Lightly press them down so they are somewhat flattened (not all the way).
Bake at 350 for 10-12 minutes. Let the cookies cool and enjoy!
