Healthy Cookie Dough Balls (Paleo, Gluten Free)

Healthy cookie dough balls covered in melted chocolate. They are naturally gluten free, refined sugar free, vegan and paleo.

Ingredients

Cookie Dough

  • 1 cup almond flour
  • ½ cup tapioca flour
  • ¼ cup pure maple syrup
  • ¼ cup refined coconut oil OR butter melted and cooled
  • 1 tsp vanilla
  • ¼ tsp salt
  • ¼ cup chocolate chips

Chocolate Coating

  • ½ cup chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Combine almond flour, tapioca flour, maple syrup, coconut oil, vanilla and salt in a large bowl. Fold in chocolate chips. Mix until fully combined and place the bowl in the freezer for 15 minutes.
  • Meanwhile, make the chocolate coating. Add your chocolate chips and coconut oil to a medium bowl. Melt in the microwave until smooth (melt by microwaving the chocolate in 20 second increments, stirring after each increment).
  • Remove your cookie dough from the freezer. It should be hard but workable. Using a spoon or your hands roll the cookie dough into 15 balls. If the cookie dough is getting too soft to work with you can place it back in the freezer for 5 minutes.
  • Take each ball and roll it in the melted chocolate (I find using a fork to help works best). Place the chocolate covered cookie dough balls on a plate lined with parchment paper.
  • Set the plate in the fridge or freezer to allow the chocolate to harden. Once the chocolate has hardened you can enjoy!
