Ingredients

Wet Ingredients

  • ½ cup canned pumpkin
  • ½ cup almond milk
  • 3 tbsp oil, butter, or refined coconut oil
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • 1 egg

Dry Ingredients

  • 1 ¼ cup oat flour
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp baking soda

Instructions

  • In a large bowl, whisk together the pumpkin, almond milk, oil, maple syrup, lemon juice and the egg. Whisk until combined and smooth.
  • Now stir in the oat flour, cinnamon, pumpkin pie spice, and baking soda. Fold until combined.
  • Preheat your mini waffle skillet.
  • Now take a heaping 1/4 cup scoop of batter and add it to the skillet.
  • Repeat 7 times to make 7 mini waffles.
