Pumpkin Waffle Recipe with Oat Flour

Wet Ingredients
- ½ cup canned pumpkin
- ½ cup almond milk
- 3 tbsp oil, butter, or refined coconut oil
- 2 tbsp maple syrup
- 1 tsp lemon juice
- 1 egg
Dry Ingredients
- 1 ¼ cup oat flour
- 1 tsp cinnamon
- ½ tsp pumpkin pie spice
- ¼ tsp baking soda
In a large bowl, whisk together the pumpkin, almond milk, oil, maple syrup, lemon juice and the egg. Whisk until combined and smooth.
Now stir in the oat flour, cinnamon, pumpkin pie spice, and baking soda. Fold until combined.
Preheat your mini waffle skillet.
Now take a heaping 1/4 cup scoop of batter and add it to the skillet.
Repeat 7 times to make 7 mini waffles.
