Healthier Pumpkin Marinara Pasta (with protein pasta)
Healthier pumpkin marinara pasta is made with fire roasted tomatoes, canned pumpkin, protein pasta, and a variety of spices you probably already have on hand. Whip up this tasty dinner dish for a fall meal!

- 1 tbsp butter or oil
- 1 garlic clove
- 14.5 oz can fire roasted tomatoes
- 1 tsp salt, pepper, Italian seasoning, dried oregano, dried basil
- ⅛ tsp cinnamon and nutmeg
- 15 oz canned pumpkin
- ½ cup pasta water reserved from boiling the pasta
- ½ cup shredded parmesan cheese
- 8 oz protein pasta cooked according to the package
- 1 bag frozen peas
Boil your pasta in a large pot of salted water. Cook according to the package.
Next, use a large pan and add the butter or olive oil. Add in the fresh garlic and sauté for 1-2 minutes.
Now add in the the full can of fire roasted tomatoes and all the seasonings. Sauté for 5-7 minutes and stir often.
Stir in the canned pumpkin, pasta water and peas. Mix until combined.
Now let the sauce simmer for a minute or two to let the peas heat up.
Lastly, stir in the shredded parmesan cheese. Serve it over your cooked protein pasta and enjoy!
