Power Balls (Easy, Gluten Free, No Bake)
These power balls make the perfect grab and go snack. They are made from a mixture of oats, peanut butter, collagen, and are sweetened with dates and a drizzle of honey.

- 10 small/medium medjool dates or 7 large dates
- 1 cup oats or gluten free oats
- 1 cup natural creamy peanut butter
- ½ cup mini chocolate chips
Start out by soaking the dates in hot water for 10 minutes. Reserve the soaking water as we will be using it in the mixture!
Now add the dates to the food processor along with 2 tablespoons of date water (if you pour out the date water by accident just use regular water!) Pulse 4-5 times until they break down a bit. They should be almost in paste form. Some chunks are ok!
Then add in the oats and peanut butter. If you're using natural peanut butter make sure you give it a good stir as natural peanut butter can be oily. Continue to pulse until combined and the mixture comes together. Scrape down the sides with a spatula if necessary.
Add 1-2 more tablespoons of date water if the mixture is too dry. Then add chocolate chips and pulse a few more times until combined.
Using your hands take about a tablespoon of the mixture and roll it into a ball. Repeat until you have 20 energy bites.
Store bites in the fridge until they are ready to be enjoyed!
