Cassava Chocolate Chip Cookies (Gluten Free)

Ingredients

  • 1 cup cassava flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¾ cup coconut sugar
  • ½ cup cashew butter or almond butter
  • ¼ cup refined coconut oil OR butter softened
  • 1 tsp vanilla
  • 1 egg
  • 1 cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees and line two cookie sheets with parchment paper.
  • In a medium bowl add the cassava flour, baking powder, and baking soda. Mix and set aside.
  • In a large bowl, cream together the coconut sugar, cashew butter and softened butter or coconut oil with a hand mixer (you can soften your coconut oil in the microwave in 5 second increments. It should resemble softened butter). Cream until smooth.
  • Then add in the egg and vanilla and continue to cream until smooth.
  • Fold in the dry flour mixture to the wet ingredients with a wooden spoon or spatula. Mix until fully combined. And then fold in the chocolate chips.
  • Scoop 16 cookies onto the cookie sheets. Lightly flatten the top of each cookie using a spatula or your hand.
  • Bake at 350 for 11-12 minutes. Let the cookies cool slightly before enjoying.
