No Bake Gingerbread Truffles (Easy, Gluten Free)

No bake gingerbread truffles are the perfect treat to make for the holidays! These cute little bites are naturally gluten free and naturally sweetened with pure maple syrup.

Ingredients

  • ½ cup creamy cashew butter
  • ¼ cup oat flour
  • 2 tbsp coconut flour
  • 2 tbsp maple syrup
  • 1 tbsp molasses
  • 1 tsp cinnamon and ginger

White chocolate coating

  • ¾ cup white chocolate chips
  • 2 tsp coconut oil

Instructions

  • In a large bowl add the cashew butter, oat flour, coconut flour, maple syrup, molasses, cinnamon and ginger. Mix until fully combined.
  • Using your hands, roll the dough into 9 balls. Place the truffles on a baking sheet lined with parchment paper. Set the baking sheet in the fridge while you prepare the chocolate coating.
  • Fill a small sauce pan 1/4 of the way with water. Bring to a boil.
  • Place the slightly smaller heat safe bowl on the saucepan. Add the white chocolate and coconut oil. You can use tongs to help hold the bowl on the saucepan.
  • Stir the chocolate consistently until it becomes smooth and melted.
  • Now, dip each truffle in chocolate. Use a fork to dip and cover the gingerbread bites in chocolate. Use another fork to help place them on the cookie sheet.
  • Top each truffle with festive sprinkles.
  • Set the gingerbread truffles back in the fridge for 15 minutes or until the chocolate has fully hardened. Enjoy!
