Gluten Free Pecan Sandies (Shortbread, Almond Flour)

Gluten free pecan sandies have an almond flour shortbread base and are loaded with candied pecans. Since they are made with almond flour they are naturally gluten free!

Ingredients

Cookie Base

  • 6 tbsp butter softened
  • ¼ cup powdered sugar
  • 1 tbsp almond milk
  • 1 tsp vanilla
  • 1 ¼ cup almond flour
  • ¼ tsp baking soda
  • ¼ tsp salt

Candied Pecans

  • 1 cup chopped pecans
  • 3 tbsp coconut sugar
  • 2 tbsp maple syrup
  • ½ tsp cinnamon

Instructions

  • Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.
  • Start off by making the candied pecans so they cool while you make the cookie dough.
  • Add all the candied pecan ingredients in a sauce pan over medium-low heat. Stir consistently for 2-3 minutes until pecans are coated. Remove the pan from the heat and set aside.
  • Now make the cookie dough. Cream together the butter, powdered sugar, almond milk and vanilla in a stand up mixer. Cream until smooth.
  • Add in the almond flour, baking soda and salt. Continue to mix until combined.
  • Using a spoon or spatula, fold in the pecans until combined.
  • Scoop 12 cookies onto your prepared baking sheet.
  • Bake for 13-15 minutes. Let the cookies cool for 10 minutes. Enjoy!
