Avocado Chocolate Chip Cookies (Avocado Oil)

Avocado chocolate chip cookies are loaded with flavor and chocolate chips, of course. They are made from a mixture of oat flour, quick oats and avocado oil. These cookies are a healthier twist on traditional cookies and will become your new favorite recipe!

Ingredients

  • ½ cup coconut sugar
  • ¼ cup butter softened
  • ¼ cup pure maple syrup
  • ¼ cup avocado oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups quick oats
  • 1 cup oat flour finely ground
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees. Line two baking sheets with parchment paper.
  • In a large bowl cream together the coconut sugar, butter, avocado oil, and maple syrup. Cream until smooth.
  • Now add in the egg and vanilla. Continue to blend until smooth.
  • Using a spoon or a spatula, fold in all the dry ingredients: oats, oat flour, cinnamon, baking soda and salt. Mix until combined.
  • Now fold in the chocolate chips.
  • Using a cookie scoop or a spoon, scoop 18 cookies onto your baking sheet.
  • Bake for 12-13 minutes. Let the cookies cool slightly before enjoying!
