Avocado Chocolate Chip Cookies (Avocado Oil)
Avocado chocolate chip cookies are loaded with flavor and chocolate chips, of course. They are made from a mixture of oat flour, quick oats and avocado oil. These cookies are a healthier twist on traditional cookies and will become your new favorite recipe!

- ½ cup coconut sugar
- ¼ cup butter softened
- ¼ cup pure maple syrup
- ¼ cup avocado oil
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups quick oats
- 1 cup oat flour finely ground
- ½ tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup chocolate chips
Preheat your oven to 350 degrees. Line two baking sheets with parchment paper.
In a large bowl cream together the coconut sugar, butter, avocado oil, and maple syrup. Cream until smooth.
Now add in the egg and vanilla. Continue to blend until smooth.
Using a spoon or a spatula, fold in all the dry ingredients: oats, oat flour, cinnamon, baking soda and salt. Mix until combined.
Now fold in the chocolate chips.
Using a cookie scoop or a spoon, scoop 18 cookies onto your baking sheet.
Bake for 12-13 minutes. Let the cookies cool slightly before enjoying!
