Cast Iron Chocolate Chip Cookie (Healthy)

This cast iron chocolate chip cookie is soft, gooey and chocolatey. It is made from almond flour and a few other ingredients you probably have on hand.

  • 10 inch cast iron skillet

Ingredients

  • 1 ¾ cup blanched almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg + 1 egg yolk
  • cup almond butter OR cashew butter creamy and smooth
  • ½ cup coconut sugar
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees and get your 10 or 9 inch cast iron skillet. If your cast iron isn't seasoned, grease it with some butter or light oil.
  • In a large bowl, whisk the egg, egg yolk, almond butter, coconut sugar, maple syrup and vanilla extract. Whisk until combined and smooth.
  • Now fold the dry ingredients into the wet mixture: almond flour, baking soda and salt. Mix until combined and then fold in the chocolate chips.
  • Press the batter into the skillet in an even layer. Top it with more chocolate chips
  • Bake for 25-30 minutes (bake for about 25 minutes for a gooey center).
  • Enjoy!

Notes

*Once the cookie skillet has fully cooled, you can store leftovers (if any!) in the fridge or freezer.
