Ingredients

  • 2 cups white whole wheat flour
  • 1 tsp baking powder
  • ¼ cup baking soda
  • 1 cup almond milk
  • cup coconut sugar
  • cup applesauce
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar OR lemon juice
  • 1 cup blueberries fresh or frozen
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350 degrees. And grease your muffin tin or line it with baking cups.
  • In a large bowl whisk the almond milk, coconut sugar, applesauce, vanilla extract and apple cider vinegar. Whisk until combined.
  • Now fold in the flour, baking powder and baking soda into the wet ingredients.
  • Carefully mix in the blueberries - don't over mix! If you're adding chocolate chips, mix them in now too.
  • Scoop the batter into the prepared muffin pan and bake for 18-22 minutes.
