- 2 cups white whole wheat flour
- 1 tsp baking powder
- ¼ cup baking soda
- 1 cup almond milk
- ⅔ cup coconut sugar
- ⅓ cup applesauce
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar OR lemon juice
- 1 cup blueberries fresh or frozen
- ½ cup chocolate chips
Preheat oven to 350 degrees. And grease your muffin tin or line it with baking cups.
In a large bowl whisk the almond milk, coconut sugar, applesauce, vanilla extract and apple cider vinegar. Whisk until combined.
Now fold in the flour, baking powder and baking soda into the wet ingredients.
Carefully mix in the blueberries - don't over mix! If you're adding chocolate chips, mix them in now too.
Scoop the batter into the prepared muffin pan and bake for 18-22 minutes.
