- 1 ½ cup white whole wheat flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg
- ½ cup almond milk
- ½ cup plain greek yogurt
- ½ cup coconut sugar
- ⅓ cup light oil light olive oil, butter, or coconut oil melted
- 1 tsp vanilla extract
- 1 cup chocolate chips
Preheat oven to 350 degrees. And grease a muffin pan with cooking spray.
In a large bowl whisk the egg, almond milk, greek yogurt, coconut sugar, oil, and vanilla. Whisk until fully combined.
Fold in the dry flour ingredients: flour, baking soda and salt into the wet ingredients just until combined.
Fold in the chocolate chips.
Scoop the batter into the prepared muffin pan. (Optional, but recommended, top each muffin with extra chocolate chips.)
Bake at 250 for 18-22 minutes. Enjoy!
