Whole Wheat Chocolate Chip Muffins (Healthy, Easy)

Ingredients

  • 1 ½ cup white whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • ½ cup almond milk
  • ½ cup plain greek yogurt
  • ½ cup coconut sugar
  • cup light oil light olive oil, butter, or coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees. And grease a muffin pan with cooking spray.
  • In a large bowl whisk the egg, almond milk, greek yogurt, coconut sugar, oil, and vanilla. Whisk until fully combined.
  • Fold in the dry flour ingredients: flour, baking soda and salt into the wet ingredients just until combined.
  • Fold in the chocolate chips.
  • Scoop the batter into the prepared muffin pan. (Optional, but recommended, top each muffin with extra chocolate chips.)
  • Bake at 250 for 18-22 minutes. Enjoy!
