One Pot Mac and Cheese (With Broccoli, Easy)
This one pot mac and cheese is a lighter, yet delicious recipe. It is made healthier with greek yogurt and a few other simple ingredients you probably have on hand!

Pasta
- 1 ½ cup water
- 1 cup milk
- ½ tsp salt
- 8 oz pasta or protein pasta (I like barilla) macaroni or elbows
- 1 cup broccoli very finely chopped
Cheese Sauce
- ½ cup milk
- ¼ cup plain greek yogurt or sour cream
- ½ cup shredded pepper jack cheese
- 1 cup shredded cheddar cheese
- ½ tsp of each: garlic powder, ground pepper, paprika and salt
- 1 tsp hot sauce optional
Bring the water, milk and salt to a boil in a medium size pan. Then add in the pasta and boil for 5 minutes.
Add the broccoli. And boil for another 2 minutes. Continue to stir as the water starts to cook off.
Now mix in the additional milk, greek yogurt, cheeses, seasonings and hot sauce. Continue to mix until the cheese has melted.
Serve immediately and enjoy!
