One Pot Mac and Cheese (With Broccoli, Easy)

This one pot mac and cheese is a lighter, yet delicious recipe. It is made healthier with greek yogurt and a few other simple ingredients you probably have on hand!

Ingredients

Pasta

  • 1 ½ cup water
  • 1 cup milk
  • ½ tsp salt
  • 8 oz pasta or protein pasta (I like barilla) macaroni or elbows
  • 1 cup broccoli very finely chopped

Cheese Sauce

  • ½ cup milk
  • ¼ cup plain greek yogurt or sour cream
  • ½ cup shredded pepper jack cheese
  • 1 cup shredded cheddar cheese
  • ½ tsp of each: garlic powder, ground pepper, paprika and salt
  • 1 tsp hot sauce optional

Instructions

  • Bring the water, milk and salt to a boil in a medium size pan. Then add in the pasta and boil for 5 minutes.
  • Add the broccoli. And boil for another 2 minutes. Continue to stir as the water starts to cook off.
  • Now mix in the additional milk, greek yogurt, cheeses, seasonings and hot sauce. Continue to mix until the cheese has melted.
  • Serve immediately and enjoy!
