Gnocchi Soup with Sausage (Easy)

- 1 pound chicken sausage casings removed
- 1 cup celery about 4 stalks, finely chopped
- 1 cup carrots about 2 large carrots, finely chopped
- 1 cup onion about 1 small onion, finely chopped
- 1 red bell pepper finely chopped
- 1 green bell pepper finely chopped
- 2 cloves garlic minced
- 3 tbsp tomato paste
- 1 15oz can diced tomato
- 1 tsp salt, pepper AND dried basil
- 6 cups chicken broth
- ¼ cup shredded parmesan cheese
- 1 parmesan rind
- 1 pound package gnocchi
Brown the chicken sausage in 1 tbsp of oil, about 5 minutes.
Now add in all the chopped veggies: celery, carrot, onion, peppers and garlic. Sauté for another 3-5 minutes.
Now add in the seasonings (salt, pepper and basil) along with the diced tomatoes and tomato paste. Mix to combine and cook another minute.
Now add in 6 cups of chicken broth, parmesan cheese and parmesan rind. Bring to a boil for 10 minutes.
Then add in the gnocchi and boil for another 3-4 minutes until the gnocchi is cooked. Serve and enjoy!
