Applesauce Muffin Recipe (Gluten Free, Paleo)

This applesauce muffin recipe is great to whip up for a grab and go breakfast or an afternoon snack. They are also naturally gluten free and paleo friendly!

Ingredients

Muffin batter

  • 1 cup applesauce
  • ½ cup almond butter or any creamy nut butter
  • cup coconut sugar
  • 3 eggs
  • 2 cups almond flour
  • ½ cup tapioca flour
  • 1 tsp baking soda
  • ½ tsp cinnamon

Crumble topping

  • ¾ cup almond flour
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • ¼ cup butter OR coconut oil melted

Instructions

  • Preheat the oven to 350 degrees and grease your muffin tin.
  • Firstly, make the crumble in a small bowl. Combine the almond flour, coconut sugar and cinnamon in a small bowl. Then mix in the coconut oil or butter. Stir to combine. Set aside.
  • Now in a large bowl, whisk together the applesauce, almond butter, coconut sugar and eggs. Whisk until fully combined and smooth.
  • Now fold in the almond flour, tapioca flour, baking soda and cinnamon using a wooden spoon or spatula. Mix until combined.
  • Scoop the batter into 12 muffin tins. Top each muffin with the crumble.
  • Bake for 20-24 minutes. Let the muffins cool slightly and enjoy!
