Applesauce Muffin Recipe (Gluten Free, Paleo)
This applesauce muffin recipe is great to whip up for a grab and go breakfast or an afternoon snack. They are also naturally gluten free and paleo friendly!

Muffin batter
- 1 cup applesauce
- ½ cup almond butter or any creamy nut butter
- ⅓ cup coconut sugar
- 3 eggs
- 2 cups almond flour
- ½ cup tapioca flour
- 1 tsp baking soda
- ½ tsp cinnamon
Crumble topping
- ¾ cup almond flour
- ¼ cup coconut sugar
- 1 tsp cinnamon
- ¼ cup butter OR coconut oil melted
Preheat the oven to 350 degrees and grease your muffin tin.
Firstly, make the crumble in a small bowl. Combine the almond flour, coconut sugar and cinnamon in a small bowl. Then mix in the coconut oil or butter. Stir to combine. Set aside.
Now in a large bowl, whisk together the applesauce, almond butter, coconut sugar and eggs. Whisk until fully combined and smooth.
Now fold in the almond flour, tapioca flour, baking soda and cinnamon using a wooden spoon or spatula. Mix until combined.
Scoop the batter into 12 muffin tins. Top each muffin with the crumble.
Bake for 20-24 minutes. Let the muffins cool slightly and enjoy!
