Chocolate Baked Oats (with peanut butter, easy)

Chocolate baked oats are the perfect way to start your day. They are slightly sweet, yet wholesome and filling. You only need a few simple ingredients you probably have on hand!

Ingredients

  • 1 cup oats
  • 1 large overripe brown banana
  • 2 tbsp cocoa powder
  • 2 tbsp natural creamy peanut butter
  • 1 tbsp maple syrup
  • ½ tsp baking powder
  • tsp salt
  • 2 eggs
  • ¼ cup milk
  • 2 tbsp chocolate chips

Instructions

  • Preheat your oven to 350 degrees and grease two 4 inch ramekins.
  • Add all the ingredients into a high speed blender except for the chocolate chips. Pulse until smooth and combined. Scrape down the sides of the blender as necessary.
  • Pour the mixture evenly between the two greased ramekins and top with chocolate chips
  • Bake for 22-26 minutes. Don't over bake as the oats can become dry.
  • Enjoy warm!
