Baked Chicken Tenders (Gluten Free)

Baked chicken tenders make the perfect easy week night meal. Since they require only 12 minutes of baking time, they can be made in under 20 minutes!

Ingredients

  • 1 pound chicken breast thin sliced and cut into strips, or chicken tenders
  • 1 cup almond flour
  • cup tapioca flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • ½ tsp salt AND pepper
  • 1 egg

Instructions

  • Preheat your oven to 425 degrees and line a large baking sheet with parchment paper.
  • Prepare the chicken by cutting the chicken breast into strips. Or if you're using chicken tenders omit this step. Set them on a plate.
  • Add the egg to a medium bowl, whisk the egg and set it aside. This will become your egg station.
  • Add both of the flours and all the seasonings into a large bowl. Mix all the ingredients together until combined. This will become your breading station.
  • Dip one piece of chicken in the egg, then dip it in the dry breading mixture, then place it on the baking sheet. Repeat this process until all the chicken is done.
  • Time to bake! Bake the chicken at 425 degrees for 6 minutes, flip each piece carefully and bake for another 6 minutes, or until the internal temperature reaches 165 degrees.
  • Enjoy the baked chicken with your favorite sauce and side dish.
