- Coconut sugar: Coconut sugar adds the perfect amount of all natural sweetness.

- Coconut oil: is the fat used in this recipe, you’ll need 1/4 cup. You can also use melted butter.
- Lemon juice, just a splash to help react with the baking soda.

- Preheat your oven to 350 degrees. And grease two mini muffin pans with cooking spray.
STEP 2
- Combine the dry ingredients. In a medium bowl, combine the oat flour, baking powder, and baking soda. Mix and set aside.
STEP 3
- Whisk the wet ingredients. In a large bowl, whisk the egg, almond milk, coconut sugar, maple syrup, coconut oil and lemon juice. Whisk until fully combined.
STEP 4
- Fold in the dry flour ingredients into the large bowl with the wet ingredients just until combined.
STEP 5
- Using a spoon, spoon the batter into the mini muffin pans. It should fill between 40-45 mini muffins. Bake at 350 for 20 minutes.

- Let the donut holes cool for 15 minutes before removing them from the pan. Add the powdered sugar to a bowl and toss in the cooled donut holes until coated. Enjoy!
