- 2 ½ cups finely ground oat flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 egg
- 1 cup almond milk
- ½ cup coconut sugar or white sugar
- ½ cup maple syrup or brown sugar
- ¼ cup coconut oil or melted butter
- 1 tsp lemon juice or apple cider vinegar
- powdered sugar for tossing about 1/3 cup
Preheat your oven to 350 degrees. Grease two mini muffin pans with cooking spray.
In a medium bowl, combine the oat flour, baking powder, and baking soda. Mix and set aside.
In a large bowl, whisk the egg, almond milk, coconut sugar, maple syrup, coconut oil and lemon juice. Whisk until fully combined. Then, fold in the dry flour ingredients just until combined.
Using a spoon, spoon the batter into the mini muffin pans. It should fill between 40-45 mini muffins. Bake at 350 for 20 minutes.
Let the donut holes cool for 15 minutes before removing them from the pan. Add the powdered sugar to a bowl and toss in the cooled donut holes until coated. Enjoy!
