Additionally, this recipe can be made ahead of time. If you want to prepare the ingredients ahead of time you definitely can. Make the ground turkey, potatoes, and eggs and let them cool. Store them in an airtight container in the fridge for up to 2 days. Reheat them back up on the stove or in the microwave. Then assemble the tacos.
They are packed with protein! Between the ground turkey sausage and the eggs, this recipe has 30 grams of protein per serving. They make a wholesome and filling ground turkey breakfast recipe.
Ingredients in the best breakfast tacos
For these tacos you will need 5 main ingredients plus seasonings and toppings. Let’s take a minute to break down each ingredient.
We will be using ground turkey to make the homemade breakfast sausage. Lean 93/7 ground turkey works best as it is flavorful and doesn’t let off much fat. Ground turkey also adds a ton of protein making these breakfast tacos super wholesome and filling.
Adding onions into the ground turkey sausage adds flavor! If you don’t like onions feel free to omit them from this recipe.
Here are the seasonings we are working with: dried sage, fennel, dried thyme, garlic powder, salt, pepper.
Shredded potatoes are another layer in these tacos. Pre shredded frozen potatoes work best as they cook and crisp up in under 12 minutes.
Eggs are another protein source! For these tacos we will be scrambling six eggs.
Lastly, toppings: salsa, sour cream, avocado, guacamole, and flour tortillas! I have listed other topping suggestions down below.
How to make turkey breakfast tacos
This recipe makes 12 street taco sized breakfast tacos! However, you can scale them up and make 6 large tacos if you prefer. These easy breakfast tacos require a few simple steps that I have outlined down below.
STEP 1
Firstly, start off by making the ground turkey sausage. Grab a large pan and add 1 tbsp oil oil or spray it with cooking spray. Add the ground turkey, onions, and seasonings. Cook the turkey until browned and fully cooked through (if necessary, drain any excess fat).
STEP 2
Secondly, make the potatoes. Cook the shredded potatoes according to the package. Or in a medium pan, add a drizzle of oil or a few tablespoons water (I like to cook the potatoes with a little water first, then add oil once the water cooks off). Let the potatoes cook on one side without moving or flipping for 5-6 minutes. Flip the potatoes, add a little more water or oil and cook another 5-6 minutes. Add salt and pepper. By this time the potatoes should be cooked with a slight crisp on the outside.
STEP 3
Meanwhile, make the eggs. While the turkey sausage and potatoes finish up, start to scramble eggs over medium/low heat. Scramble the eggs to your liking.
STEP 4
Time to assemble the tacos! Add the street taco sized tortillas on a large tray or a large baking sheet.
Add a layer of turkey sausage.
Now layer the potatoes and eggs.
Add some cheese and any other toppings you like. We like to add salsa and sour cream!

Variations
Below are a few fun variations if you’re looking to switch things up.
Deconstructed taco bowls! Serve all the taco ingredients in a bowl with salsa, sour cream, avocado, cheddar cheese, tomatoes, onions, and peppers. Add any toppings you love!
Crunchy corn taco shells. If you prefer crunchy tacos, definitely use crunchy tortilla shells instead!
Quesadilla breakfast taco. Use all the ingredients and make quesadillas! Grab a skillet, add the tortilla, and melt the cheese on the tortilla. Add the turkey, eggs, and potatoes on top of the cheese. Add any remaining toppings. Fold the tortilla in half and crisp each side on the skillet.
Use ground beef or ground pork. This recipe calls for ground turkey to make the sausage. However, you can definitely use ground beef or ground pork. Try to use lean meat as it doesn’t let off excess oil fat. I like using 90/10 or 93/7 lean.
Add taco seasoning! If you want Mexico taco flavor I recommend adding your favorite taco seasonings to the turkey or the shredded potatoes.
Lastly, sauté some peppers and onions! For added veggies, sauté some peppers and onions in a little bit of olive oil, salt, pepper, and garlic powder.
