Best Breakfast Tacos
The absolute best breakfast tacos are made with ground turkey sausage, eggs, potatoes, and endless toppings! This recipe is the best family weekend breakfast that can be ready in under thirty minutes.

Ground Turkey Sausage
- 1 pound ground turkey 93/7
- ¼ cup onions
- 1 tsp EACH: dried sage, fennel seed, garlic powder
- ½ tsp dried thyme
- ½ tsp salt AND pepper
Hashbrowns
- 2 cups frozen shredded potatoes
- ½ tsp salt AND pepper to taste
Eggs and Toppings
- 12 street taco tortillas
- 6 eggs
- TOPPINGS: cheddar cheese, salsa, sour cream
Start off by making the ground turkey sausage. Grab a large pan and add 1 tbsp oil oil or spray it with cooking spray. Add the ground turkey, onions, and seasonings. Cook the turkey until browned and fully cooked through (if necessary, drain any excess fat).
Now cook the shredded potatoes according to the package. Or in a medium pan, add a drizzle of oil or a few tablespoons water (I like to cook the potatoes with a little water first, then add oil once the water cooks off). Let the potatoes cook on one side without moving or flipping for 5-6 minutes. Flip the potatoes, add a little more water or oil and cook another 5-6 minutes. Add salt and pepper. By this time the potatoes should be cooked with a slight crisp on the outside. Season to your liking.
While the turkey sausage and potatoes finish up, start to scramble eggs over medium/low heat. Scramble the eggs to your liking.
Time to assemble the tacos! Add the street taco sized tortillas on a large tray or a large baking sheet. Add a layer of turkey sausage, then layer the potatoes and then the eggs.
Add some cheese and any other toppings you like! We like added salsa and sour cream. This recipe makes 12 street taco sized breakfast tacos.
