Baked oatmeal bars are made from a mixture of oats and oat flour! These bars are thick, chewy, and chocolatey… need I say more? You can bake these ahead of time and store them in the fridge of freezer for a yummy and healthy treat.

Here are the ingredients we are working with.
- Oat flour and rolled oats are the two main ingredients in this recipe
- Cinnamon, baking soda and salt will add flavor and help puff up these bars
- One egg helps bind everything together
- Almond milk adds moisture and liquid
- Applesauce also add moisture and texture to these bars
- Honey helps sweeten things ups!
- Use any nut butter of choice (these are some of my favorites: cashew butter, peanut butter, and almond butter)
- Lastly, chocolate chips!

What type of nut butter can I use?
For this recipe, feel to use any nut butter of choice.
If you’re a peanut butter lover definitely use natural creamy pb! Using pb makes these peanut butter oatmeal bars absolutely delicious. (Personally, it’s my favorite!)
You can also use almond butter or cashew butter. Just note that using different nut butters will change the flavor profile of these baked bars ever so slightly.
If you aren’t a fan of those, you can substitute in sun butter or tahini! They will provide the same consistency and texture.
P.s make sure it is creamy as a chunky nut butter will mess with the texture of these bars.
How to make these baked bars
- Firstly, preheat your oven to 350 degrees and grease your 8×8 pan with cooking spray (or line it with parchment paper for easy removal).
- Secondly, in a medium bowl, mix the oats, oat flour, cinnamon, baking soda and salt. Mix until combined and set aside.
- Now in a large bowl whisk together the egg, almond milk, applesauce, honey and nut butter until well combined.
- Then fold in the dry flour mixture into the wet ingredients just until combined. Then fold in the chocolate chips.
- Bake at 350 degrees for 25-28 minutes. Let the bars cool and enjoy!
Tips and variations
- For extra chocolate goodness: sprinkle extra chocolate chips on top before baking. Highly recommend!
- Store the the left over bars in an airtight container in the fridge for a week. Or you can store them in the freezer for 3 months. If you chose to freeze these baked bars, let them cool fully before storing them in the freezer. To warm them, simply defrost them in the microwave before enjoying. Or let the rest at room temperature.
- Use different nut butters! As mentioned, feel free to use any nut butter you love. Here are some that work really well in this recipe: peanut butter, almond butter, cashew butter, tahini or sun butter.
