Peanut butter and jelly cookies are a must! You only need 6 simple ingredients that you probably already have on hand. These cookies are made from a mixture of oat flour, peanut butter and maple syrup.
If you love peanut butter and jelly cookies…
For as long as I can remember I have always loved anything with peanut butter. Peanut butter cookies, peanut butter toast, peanut butter smoothies, peanut butter you name it. So, it only made sense to use the perfect duo and make soft and chewy peanut butter and jelly cookies. For this cookie recipe we will use creamy peanut butter and store bought strawberry jam. There are so many clean jelly and jams out there so you can pick up any flavor jelly at your local grocery store. If you prefer, you can definitely make your own jelly for this recipe.
Why you’ll love this recipe
- Peanut butter and jelly makes the best combination, especially in cookie form!
- This recipe requires just six simple ingredients.
- These peanut butter and jam cookies are made with whole grain oat flour.
- PB and J cookies are soft and fluffy.
- This recipe is super easy and fun to make with the family!
Ingredients you’ll need for PB&J cookies
- Oat flour: I love baking with oat flour. Finely ground oat flour makes theses cookies perfectly chewy and fluffy. Oat flour provides a great source of healthy carbs, fibers and whole grains. These are some of the few reasons I love to bake with oat flour.
- Baking powder: Baking powder will help lighten up the texture of these cookies and increase the volume!
- Peanut butter: What are PB&J cookies without peanut butter? For this recipe you will want to use creamy peanut butter. See some notes below on how to use natural creamy peanut butter!
- Maple syrup: Make sure you use pure maple syrup! Maple syrup adds the perfect sweetness and chewiness to these brownie
- Vanilla extract: Vanilla extract adds the perfect hint of flavor.
- Jelly: Jelly adds the perfect touch to these cookies. For this recipe I used my favorite store bought jam.
What type of peanut butter can I use?
For this recipe I would stick to a creamy peanut butter or another creamy nut butter that you prefer. Using a chunky peanut butter will mess with the texture of these cookies. There are so many creamy and natural peanut butters out there so definitely use your favorite brand. If you are using natural peanut butter, make sure you give it a really good stir as natural can be very oily.
How to make peanut butter and jam cookies
STEP 1
Preheat your oven to 350 degrees and line your cookie sheets with parchment paper.
STEP 2
Next, cream together the peanut butter, maple syrup and vanilla in a large bowl. Then add in the oat flour and baking powder. Continue to mix until full combined.
STEP 3
Using your hands, roll the dough into 20 balls and place them on the cookie sheets. Now, use a teaspoon to press an indentation into each cookie. Fill each indentation with jam.
STEP 4
Bake in the oven for 10-11 minutes. The cookies will look a little underdone but don’t worry! Let them cool for about 10 minutes so they can set and they will be soft and chewy. Enjoy!
Tips for making the best PB and J cookies
TIP 1
Firstly, use a hand mixer or a stand up mixer to cream together the ingredients. You’ll want to cream the peanut butter, maple syrup and vanilla and then add in the rest of the ingredients. Creaming these ingredients together will allow everything to fully combine.
TIP 2
Secondly, use creamy peanut butter. Creamy peanut butter makes these cookies so soft and fluffy! Use any creamy butter of choice.
TIP 3
Lastly, add the jelly before baking the cookies. Roll the peanut butter cookie dough into 20 balls. Using a teaspoon, press an indentation into each cookie to leave room for the jelly. Scoop a teaspoon of jelly into each indentation. Bake and enjoy!
