Below are the ingredients needed to make these cookies! I love using a combination of paleo flours as it results in nicely textured baked goods. You only need 8 ingredients to make these cookies.
Almond flour and coconut flour are the two main flours used. I would not suggest substituting a different flour.
Baking soda helps puff up these cookies and is the leavening agent.
You’ll need a pinch salt to enhance the flavor.
One egg helps bind all the ingredients together.
Butter OR coconut oil both work as the baking fat. Use coconut oil for the paleo and dairy free option.
Coconut sugar and maple syrup create an all natural sweetness.

I always love adding a healthy twist to my baked goods. Treats are meant for enjoying and indulging but, if they taste delicious AND have added nutrients then thats a bonus in my book.
These cookies are made from a majority of almond flour. Almond flour is a great gluten free baking powder! Almonds are filled with healthy fats, fiber, protein, Vitamin E and magnesium. How to make this coconut flour cookie recipe
This recipe requires just a few simple steps! The below information outlines how to make these cookies.
Firstly, preheat the oven to 350 degrees. And line a large baking sheet with parchment paper.
Secondly, cream the wet ingredients. Add the egg, softened butter, coconut sugar, and maple syrup to a large bowl. Cream together with a hand mixer.
Next, add in the dry ingredients: add in the the almond flour, coconut flour, baking soda and salt with a spoon and mix until combined.
Now fold in the chocolate chips. Just until combined!
Scoop the cookies onto the baking sheet.
Bake for 10-13 minutes.

The best part of these cookies is definitely the melted chocolate!
Start off by adding the chocolate chips and coconut oil OR butter into a small microwave safe bowl. Microwave in increments of 15 seconds, stirring each time, until both fully melted.
One by one, dip the cooled cookies in the melted chocolate about half way.
Place the cookies back on the baking sheet to let the chocolate harden. You can also set them in the fridge for 10 minutes to allow the chocolate to harden quickly. Enjoy!

How to store these paleo chocolate chip cookies
Once these cookies have fully cooled, store them in an airtight container. This will allow the cookies to stay nice and fresh.
However, with these cookies, I recommend storing them in the fridge or freezer due to the dipped chocolate. This will ensure the chocolate stays hardened. Store them in the fridge for a week or in the freezer for up to 3 months.
I typically follow this storing rule for any baked goods! I store them in the freezer as they last much longer! Simply defrost one, or two, …or the whole batch at room temperature. You can also defrost them in the microwave.
*Pro tip: heat them up for a few extra seconds in microwave and serve them with a scoop of vanilla ice cream. Trust me, you won’t regret it.
