Healthy Chocolate Chip Cookies (Gluten Free, Paleo)
Healthy chocolate chip cookies are dipped in chocolate and are so easy to whip up! They are made from only 8 ingredients that you probably have on hand. They are extra soft, moist and chewy.

Cookie Batter
- 1 egg
- ⅓ cup softened butter, ghee or coconut oil
- ⅓ cup coconut sugar
- 2 tbsp pure maple syrup
- 1 cup almond flour
- ⅓ cup coconut flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup chocolate chips
Melted Chocolate
- ⅓ cup chocolate chips
- 1 tbsp butter, ghee or coconut oil
Firstly, preheat the oven to 350 degrees and line a large baking sheet with parchment paper.
Cream together the wet ingredients using a hand mixer: egg, softened butter OR coconut oil, coconut sugar, and maple syrup to a large bowl.
Next, add in the the almond flour, coconut flour, baking soda and salt with a spoon. Mix until combined.
Now fold in the chocolate chips.
Scoop the cookies onto the baking sheet. Bake for 10-13 minutes.
Let them cool for a few minutes and enjoy!
