Healthy Chocolate Chip Cookies (Gluten Free, Paleo)

Healthy chocolate chip cookies are dipped in chocolate and are so easy to whip up! They are made from only 8 ingredients that you probably have on hand. They are extra soft, moist and chewy.

Ingredients

Cookie Batter

  • 1 egg
  • cup softened butter, ghee or coconut oil
  • cup coconut sugar
  • 2 tbsp pure maple syrup
  • 1 cup almond flour
  • cup coconut flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips

Melted Chocolate

  • cup chocolate chips
  • 1 tbsp butter, ghee or coconut oil

Instructions

  • Firstly, preheat the oven to 350 degrees and line a large baking sheet with parchment paper.
  • Cream together the wet ingredients using a hand mixer: egg, softened butter OR coconut oil, coconut sugar, and maple syrup to a large bowl.
  • Next, add in the the almond flour, coconut flour, baking soda and salt with a spoon. Mix until combined.
  • Now fold in the chocolate chips.
  • Scoop the cookies onto the baking sheet. Bake for 10-13 minutes.
  • Let them cool for a few minutes and enjoy!
