Ingredients Used to Make Buffalo Blue Cheese Meatballs
Below are the ingredients needed to whip up these meatballs.
- Ground turkey: I love using 93/7 lean turkey. You will need 1 1/3 pounds
- Egg: Add in one egg to help bind everything together.
- Blue cheese: Mix in 1/2 cup of blue cheese crumbles. Feel free to add in 1/4-1/3 for less cheesiness.
- Almond flour: Almond flour helps hold all the ingredients together. This is my favorite kind from amazon!
- Hot sauce: You will use 2-3 tbsp of hot sauce, plus more for serving. Feel free to use your favorite hot sauce, I love franks!
- Dried parsley, Garlic powder, Onion powder, and Salt: These dry spices make the best flavor profile.
- Lastly, celery and carrots for serving: Celery and carrots are my favorite veggies to eat with these meatballs.
The Ground Meat Used
My favorite meat to use for meatballs is ground turkey. I always buy 93/7 lean blend as it makes the best tender meatballs. But feel free to use beef, pork, or any combination you prefer.
Please note that using different blends of meat can result in different textures. If you use a leaner meat, the meatballs can become a little tougher and vice versa with a fattier meat.
How to Make the Best Buffalo Blue Cheese Meatballs
Firstly, grab a large bowl. Add all the ingredients: ground turkey, egg, blue cheese, almond flour, hot sauce and spices.
Secondly, use your hands and mix all the ingredients together (be careful to not over mix, just gently mix everything together).
Thirdly, take about a tablespoon or two of the mixture and roll it into a ball. Repeat this process until you have 15 meatballs.
How to serve these Meatballs
- Serve the meatballs on their own with a side of carrots, celery and extra hot sauce.
- You can enjoy them over white sticky rice or pasta.
- Or personally my favorite way to enjoy them is over a kale salad, with chopped up celery and carrots and a sprinkle of extra blue cheese on top!

Ingredients
- 1 ⅓ lb ground turkey 93/7 lean
- 1 egg
- ½ cup blue cheese crumbled
- ¼ cup almond flour
- 3 tbsp hot sauce + more for serving
- 2 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
Instructions
- First grab a large bowl. Add all the ingredients: ground turkey, egg, blue cheese, almond flour, hot sauce and spices.
- Now using your hands, mix together all the ingredients. (Be careful to not over mix, just gently mix everything together).
- Then take about a tablespoon or two of the mixture and roll it into a ball. Repeat this process until you have 15 meatballs.
- Heat a large skillet with a tablespoon of olive oil. Once hot, add the meatballs.
- Using tongs, brown the meatballs. Turning every so often.
- Once browned, add a lid and cook the meatballs for 3-4 minutes. Flip the meatballs and cook for another 3-4 minutes. They should reach an internal temperature of 165 degrees.
- Once cooked, serve with more hot sauce and enjoy!
