How to make easy homemade pesto
First you’ll want to make the pesto which is so easy to make! I always love having it on hand to add to salad, wraps or sandwiches.
Just add all the ingredients below to a high speed blender.
Blend until smooth. And that is it – it is so easy to make!

How to make quick and easy pickled onions
If you don’t have pickled onions on hand, definitely make my quick and easy pickled onion recipe below.
In a glass jar or a container with a lid add:
- 1 cup water (room temperature)
- 1/2 cup apple cider vinegar
- 1 tsp salt
- 1 tsp sugar
- medium onion
Firstly, whisk all the ingredients together (except the onion) in your container.
Secondly, slice the onions however you prefer and add it to the container with the pickling juices.
Thirdly, store them in the fridge for up to a week (The longer they sit the better!)
Pickling onions is so easy to do and it really takes this salad to the next level.

Ingredients
- 6 cups arugula and spinach or greens of choice
- ¼ pound turkey breast deli sliced
- ¼ cup mozzarella cheese pearls
- 1 tomato sliced
- ½ cup pickled onions or regular onions

- 1 cup fresh basil
- 2 cloves garlic
- 2 tbsp pine nuts
- ¼ cup shredded parmesan cheese
- ¼ cup olive oil
Instructions
- First, make your pesto. In a high speed blender add all your pesto ingredients and pulse a few times until smooth. Set aside.
- Now separate your mixed greens into two salad bowls.
- Top each salad with sliced turkey, mozzarella pearls, tomatoes, and pickled onions.
- Drizzle with pesto and enjoy!
