- 6 cups arugula and spinach or greens of choice
- ¼ pound turkey breast deli sliced
- ¼ cup mozzarella cheese pearls
- 1 tomato sliced
- ½ cup pickled onions or regular onions

- 1 cup fresh basil
- 2 cloves garlic
- 2 tbsp pine nuts
- ¼ cup shredded parmesan cheese
- ¼ cup olive oil
First, make your pesto. In a high speed blender add all your pesto ingredients and pulse a few times until smooth. Set aside.
Now separate your mixed greens into two salad bowls.
