Gluten free marshmallow brownies
Marshmallow brownies are a brownie recipe topped with fluffy brownies and chocolate icing. They have a bottom brownie layer, a gooey marshmallow middle layer, and a rich chocolate frosting top layer. Basically pure deliciousness.
These almond flour brownies are at the top of my favorite desserts list. They are incredibly decadent with ridiculously fudgy and gooey layers. They are also gluten free, dairy free, grain free, paleo friendly, and refined sugar free!

Ingredients needed for gluten free marshmallow brownies
Here are the ingredients we are working with!
- Chocolate chips are used to give these brownies a rich chocolate flavor.
- Coconut oil will be mixed in with the chocolate chips.
- Eggs will bind all the ingredients together.
- Coconut sugar adds the perfect amount of sweetness in these brownies.
- Almond flour is a great gluten free flour. I love using it for baking! For this recipe we will only need 1/2 cup.
- Coconut flour is another great gluten free flour. We will add 1 tbsp to create the perfect texture.
- Baking soda will help puff up the brownies.
- Lastly, just a pinch of salt to help enhance the flavor.
Ingredients needed for the middle marshmallow layer
- 2 cups of mini marshmallows. Yup, that’s it!
Ingredients needed for the chocolate frosting
You only need 4 ingredients for the delicious chocolate frosting layer.
- Coconut oil helps create the frosting. We will use 1/4 cup!
- Cocoa powder makes the chocolate frosting extra chocolatey.
- A splash or two of almond milk adds some liquid into the frosting.
- Lastly, we will use powdered sugar to help create the frosting.
Variations and substitutes
Coconut oil or butter. This recipe calls for refined coconut oil as the baking fat. However, you can also use melted butter if you prefer.
Milk chocolate, dark chocolate or semi-sweet chocolate. To get rich and chocolatey brownies, we are going to melt some chocolate chips into the batter. Feel free to use milk, dark, or semi sweet chocolate depending on your preference.
How to make the best gluten free marshmallow brownies
Firstly preheat your oven to 350 degrees and line an 8×8 pan with parchment paper.
Now make the brownie layer. Melt the chocolate chips with the coconut oil in a large microwave safe bowl. Let it cool. Then add in the eggs, coconut sugar, almond flour, coconut flour, baking soda and salt. Mix until combined and pour into the prepared pan.
After that bake at 350 degrees for 20 minutes.
Immediately remove the pan and add the two cups of marshmallows. Return the pan to the oven to cook for 2 more minutes.
Let the pan cool while you prepare the icing.
Making the frosting in a small sauce pan on the stove. Add in the cocoa powder, coconut oil and almond milk. Mix over low heat until fully melted. Now stir in the powdered sugar. Then, pour the frosting over the marshmallow layer.
Finally, let the brownies cool for at least two hours before slicing. Or let the brownies cool for an hour and then add them to the fridge for an hour to harden before slicing.
How to serve almond flour brownies
These brownies are best served chilled due to the icing and marshmallow layer. Once the brownies have cooled for an hour. Place them in the fridge for another hour or two before slicing. I actually prefer storing my marshmallow brownies in the freezer and enjoying them directly out of the freezer – yum!
Add some ice cream. Heat up your brownie in the microwave and serve it warm with a scoop of your favorite ice cream.
Top with more marshmallows! Any marshmallow lovers? Add some more marshmallows on top of your serving.
For extra chocolate flavor, sprinkle some chocolate chips on top.
