You will need the below ingredients to make these healthy morning glory muffins.
- Firstly, white whole wheat flour is the main flour in this recipe. It is rich in fiber and whole grains. White whole wheat flour is great to use for baking as it is neutral in taste.
- Baking powder is key as it helps puff up these muffins.

- Coconut oil is the baking fat we are working with. It adds moisture and texture! You can also use melted butter or a light oil.

How to make the best morning glory muffins
These muffins require a few simple step. The below outlines a few steps on how to make the best morning glory muffins.
Firstly, start out by preheating your oven and greasing your muffin tin.
Secondly, grab a large bowl. Add in the eggs, applesauce, maple syrup, and coconut oil and whisk until smooth. Then fold in the mix ins: shredded apple, shredded carrots, raisins, walnuts, and flaked coconut.
Thirdly, to the same bowl add in the dry ingredients: flour, baking powder, cinnamon and baking soda.
Then fold everything together until fully combined and smooth.
Finally, scoop the batter into 12 muffin tins and bake for 22-24 minutes.

Measuring flour for baking can be a little tricky. We don’t want to use too much or that will result in dry baked goods. And we don’t want to use too little. So how can be get the right amount? Well, keep reading because I’ve got you covered!
Since flour can become packed down inside the bag or your storage jar, it’s always a good idea to fluff it up before measuring. Using a fork or butter knife, simply fluff it up and move it around. You don’t want to scoop packed flour as you will end up using too much flour and it will result in dry baked goods.
After you fluff the flour, gently scoop it into your measuring cup. Level it off with a knife to get an even scoop. And that’s it!
Variations and substitutes
Flour. This recipe calls for white whole wheat flour. Feel free to use white flour instead. Just make sure you use the measure the flour correctly (I have outlined how to measure flour above!)
Coconut oil is the baking fat in this recipe. Feel free to use melted butter, or another light oil of choice
Raisins. If you don’t like raisins simply omit them from this recipe. Raisins do add bites of sweetness so I recommend adding in chocolate chips instead.
Maple syrup is the all natural sweetener we are working with. Feel free to use honey instead!
How to store
If these muffins aren’t consumed in one sitting (lol!) store them in an airtight container.
They can be stored in the fridge for a week or in the freezer for 3 months. If you are storing them in the freezer, make sure you store them in a freezer friendly container. To reheat the muffins, simply defrost them at room temperature or heat them up in the microwave.

- 1 tsp lemon juice or ACV
Instructions
- Preheat your oven to 350 degrees. Grease your muffin pan or line them with baking cups.
- In a large bowl, whisk together the eggs, applesauce, maple syrup, coconut oil.
- Then fold in the mix ins: apple, carrots, raisins, walnuts and coconut.
- Now fold in the dry ingredients: flour, baking powder, cinnamon, and baking soda. Fold until completely combined.
- Scoop the batter into 12 muffin cups. Bake at 350 degrees for 22-24 minutes.
- Let the muffins cool slightly before enjoying!
