- 1 ⅔ cups white whole wheat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp baking soda
- 2 eggs
- ⅔ cup unsweetened apple sauce
- ½ cup pure maple syrup use ¼ cup for less sweet
- ½ cup coconut oil melted and cooled, or light oil
- ½ cup of each: shredded apple, shredded carrots, raisins, walnuts, and flaked coconut
- 1 tsp lemon juice or ACV
Preheat your oven to 350 degrees. Grease your muffin pan or line them with baking cups.
In a large bowl, whisk together the eggs, applesauce, maple syrup, coconut oil.
Then fold in the mix ins: apple, carrots, raisins, walnuts and coconut.
Now fold in the dry ingredients: flour, baking powder, cinnamon, and baking soda. Fold until completely combined.
Scoop the batter into 12 muffin cups. Bake at 350 degrees for 22-24 minutes.
Let the muffins cool slightly before enjoying!
