So, what are pumpkin overnight oats?
Overnight oats are just another way to make oatmeal. You’re probably used to oats served warm from the stove. Which is how I am use to eating them too (cooked on the stove top in milk or water and served warmed)! But, overnight oats are made using a non-cook process. Overnight oats are soaked in milk and stored in the fridge overnight. The overnight soaking process breaks down the oats making them very soft and enjoyable.

You’ll need these eight ingredients to make this recipe.
- Oats are the main event. We will be using 1/2 cup.
- Milk or almond milk will help soak the oats.
- Canned pumpkin for pumpkin and fall flavor.
- Vanilla greek yogurt for extra creaminess and sweet flavor.
- Chia seeds are vitamin packed seeds. They add texture to these oats.
- Pumpkin seeds, or walnuts add crunch and flavor
- Just a splash of pure maple syrup for added sweetness
- Lastly, cinnamon! For enhanced fall flavor.

Here’s how to make pumpkin pie overnight oats:
STEP 1
Firstly, you’ll want to grab your mason jar with a lid. Wide mouth mason jars work best! I use 16oz wide mouth mason jar.

Secondly, add all the ingredients in the jar and mix well.

Thirdly, put the lid on your jar and store the oats in the fridge overnight. These oats are best when enjoyed within 1-2 days.
STEP 4
Remove the oats from the fridge in the morning and enjoy!
Variations and substitutes
Whole oats or quick oats. For these overnight oats, you can use whole old fashioned oats or quick oats. I have used both options!
Milk or almond milk. To get extra creamy overnight oats you’ll definitely want to use milk. Cows milk, almond milk, oat milk, cashew milk, or any milk of choice works great.
Maple syrup or honey. These oats have a splash of added sweetness. You can use maple syrup and honey! Maple syrup is the sweetener we are working with but you can also use honey.
Greek yogurt. This recipe calls for two tablespoons of vanilla greek yogurt. If you don’t have vanilla you can definitely use full flat plain greek yogurt. Also, if you’re dairy free just substitute in your favorite dairy free vanilla or plain yogurt.
Nuts and seeds. For added crunch and flavor, this recipe calls for pumpkin seeds and walnuts. However, add a tablespoon or two of your favorite nuts – like peanuts, cashews or almonds.
