<p style="font-size:16px"><strong>Firstly, preheat the oven to 350 degrees.</strong> And line two baking sheets with parchment paper.</p>



<p style="font-size:16px"><strong>Whisk together the wet ingredients.</strong> Whisk the eggs and sugar until smooth. Then add the peanut butter, butter and vanilla. Continue to whisk until smooth.</p>



<p style="font-size:16px"><strong>Add the dry ingredients.</strong> Now add in the almond flour, oats, baking powder and salt. Mix until combined and smooth.</p>



<p style="font-size:16px"><strong>Add the chocolate.</strong> Mix in the chocolate chips and scoop 24 cookies onto the baking sheets.</p>

<p style="font-size:16px">I recommend using natural creamy peanut butter. Make sure you give your peanut butter a good stir as natural nut butters can be very oily. </p>



<p style="font-size:16px"><strong>Can I freeze these cookies?</strong></p>



<p style="font-size:16px">Yes! Simply let the cookies cool at room temperature and then store them in a freezer friendly container. To enjoy the cookies at a later date, simply let them thaw at room temperature or defrost them in the microwave.</p>

<ul class="wp-block-list" style="font-size:16px"><li><b>Firstly, you&#8217;ll want to make your cookie dough.</b> All you need to do is combine the ingredients in a medium bowl until it forms into a ball. Then, place it in the fridge while you make your filling.</li></ul>



<ul class="wp-block-list" style="font-size:16px"><li><strong>Make your caramel filling. </strong>Combine all filling ingredients in a medium bowl. Using a hand mixer, cream until smooth.</li></ul>



<ul class="wp-block-list" style="font-size:16px"><li><strong>Roll cookie dough in 12 balls. </strong>Using a spoon and the palm of your hands, roll the dough into 12 balls and line them up evenly on a baking sheet.</li></ul>

<p class="has-normal-font-size">This oatmeal raisin cookie recipe is made with some simple ingredients that you probably already have on hand.</p>

We will be using 2 cups. I like using finely ground blanched almond flour because I find that it gives these cookies the best consistency. </li></ul>

<ul class="wp-block-list"><li><strong>Eggs</strong>: Eggs help bind these cookie together. They also provide some moisture.</li></ul>



<ul class="wp-block-list"><li><strong>Coconut sugar</strong>: Adding coconut sugar gives these cookies the perfect sweetness. Feel free to substitute in white sugar or brown sugar if you prefer.</li></ul>

<p class="has-normal-font-size">There are a few reasons why I love these healthy cookies so much! </p>

<p class="has-normal-font-size">The main flour in this recipe is <strong>almond flour</strong>! Almond flour is a great gluten free flour substitute. Since it is made with only one ingredient, ground almonds, it is a healthier alternative to traditional flour. Almond flour is higher in fats and lower in carbs than traditional flour but it offers many other nutritional benefits like vitamin E, protein and magnesium. </p>

<p class="has-normal-font-size">The main sweetener in this recipe is <strong>coconut sugar</strong>. Besides being a great substitute for white and brown sugar, coconut sugar is a great natural plant based sweetener. <p class="has-normal-font-size">Not only are these cookies loaded with healthy ingredients but they also can be made ahead of time. </p>



<p class="has-normal-font-size">These cookies can be stored in the fridge for 3-4 days or in the freezer for 3 months. </p>



<p class="has-normal-font-size">I love storing my baked goods in the freezer! They last so much longer (and I kind of love a chilled cookie!) and I always have yummy treats on hand when we have guests.</p>
