<p class="has-large-font-size"><strong>Preheat your oven to 350 degrees</strong> and line two baking sheets with parchment paper.</p>

<p class="has-large-font-size"><strong>Now fold the dry ingredients into the wet ingredients.</strong> Add in the coconut flour and baking powder to the wet mixture and use a spoon or spatula to fold the mixture until combined.</p>

<p class="has-large-font-size"><strong>Fold in the m&amp;m&#8217;s. </strong>The best part &#8211; time to fold in the m&amp;m&#8217;s!</p>

<p class="has-large-font-size"><strong>Scoop and bake!</strong> Using a spoon or a cookie scoop, scoop 18 cookies onto your baking sheet (press extra m&amp;m&#8217;s into the top of each cookie if you choose). Bake for 10-12 minutes. Let the cookies cool slightly and then enjoy!</p>

<p class="has-large-font-size">Once these cookies have fully cooled, store them in an airtight container on the counter for 2-3 days. They can also be stored in the fridge for up to a week! I find it best to store leftover cookies in the fridge as they last much longer. Additionally, you can store these in a freezer friendly bag in the freezer for up to 3 months. To defrost the cookies from the freezer, simply let them thaw at room temperature or defrost them in the microwave. </p>

<p class="has-large-font-size">Everyone needs a go-to double chocolate chip cookie recipe (<em>especially when you want to switch things up from traditional chocolate chip cookies, these chocolate cookies are going to become your new favorite recipe).</em> These cookies are made from a base of almond flour, cocoa powder and coconut flour to create perfectly textured cookies. These dry ingredients are combined with your typical cookie ingredients (like eggs, oil and sugar) to create the best almond flour cookies. </p>

<p class="has-large-font-size">You will need the below ten ingredients to whip up these double chocolate chip cookies!</p>

<li><strong>Almond flour: </strong>Almond flour is the main flour in this recipe. You will want to use blanched almond flour as it is made from almonds with skins removed. Blanched almond flour tends to be much finer than almond meal resulting in better textured baked goods. </li>

<li><strong>Cocoa powder</strong>: Next up is cocoa powder. We will be using 1/4 cup to make a rich chocolate flavor. Cocoa powder can be very bitter in flavor. We will be adding pure maple syrup to add sweetness and cut out the bitterness. </li>

<li><strong>Coconut flour</strong>: Coconut flour is a great gluten free flour that pairs nicely with almond flour. We will be using 3 tablespoons in this recipe. </li>

It is refined meaning it is neutral in taste and smell (it just gives off a slight coconut flavor). You can also use <strong>butter</strong> or <strong>avocado oil</strong> for an even swap.</li>

<li><strong><a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">Pure maple syrup</a></strong>: Pure maple syrup is a great all natural sweetener that is used to add a little sweetness into these cookies. I love <a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">this kind</a>. Make sure to use pure maple syrup and not pancake syrup. </li>

<p class="has-large-font-size">These chocolate chocolate chip cookies are the best because they have double the chocolate! They are also paleo, gluten free, and so easy to make! They have a soft chewy center and a slightly crisp outside. Plus, you can top them with flaked sea salt to create the best salty and sweet cookie. </p>



<p class="has-large-font-size"><strong>First off,</strong> the main flour used is <strong>almond flour</strong>. I love baking with almond flour as it is only made with one ingredient: ground almonds! Which makes it a healthy alternative from traditional flour. It is lower in carb and higher in fat content than traditional flour but it also has many other nutrients like vitamin E and magnesium. Almond flour is great gluten free and paleo baking flour. </p>



<p class="has-large-font-size"><strong>Secondly,</strong> the other flour used is <strong>coconut flour</strong>. Baking with coconut flour can be tricky as it absorbs a lot of liquid in baking. I find that adding small amounts of coconut flour in combination with almond flour allows for the perfect consistency. You can typically find coconut flour at your local grocery store or you can order a large bag on Amazon.  </p>



<p class="has-large-font-size"><strong>Lastly,</strong> you will love these cookies because they <strong>only require ten ingredients</strong> that you probably have on hand. A simple double chocolate cookie recipe? Sign me up! In addition to the almond flour and coconut flour you will need: <em>cocoa powder, baking soda, salt, egg, coconut oil, maple syrup and chocolate chips. </em></p>

<p class="has-large-font-size">Here are the ingredients you will need to achieve the best cookies:</p>



<p class="has-large-font-size"><strong>Almond flour, coconut flour</strong> and <strong>tapioca flour</strong> are the three main flours we are working with. All three of these flours work really well together to create the best textured cookies. </p>



<p class="has-large-font-size"><strong>Baking soda </strong>helps puff up these cookies. You&#8217;ll need 1/2 teaspoon. </p>



<p class="has-large-font-size">Just a pinch of <strong>salt </strong>to help enhance the flavor! We will be using 1/4 teaspoon.</p>



<p class="has-large-font-size">One <strong>egg</strong> helps bind all the ingredients together. A room temperature egg works best as it blends in nicely the batter. </p>



<p class="has-large-font-size"><strong>Butter</strong> is used as the main baking fat in this recipe. You can use grass fed butter or any butter of your choice. </p>



<p class="has-large-font-size"><strong>Coconut sugar </strong>is used as the all natural sweetener. We will be using 1/3 cup.</p>



<p class="has-large-font-size"><strong>Vanilla extract</strong> helps enhance all the flavors. Just one teaspoon! </p>



<p class="has-large-font-size">Just a teaspoon of <strong>lemon juice </strong>or<strong> apple cider vinegar</strong>.</p>



<p class="has-large-font-size">Lastly, <strong>raisins</strong> (of course!) to finish things off. We will be using one full cup of raisins. However, you can use however many raisins you like. </p>

<p class="has-large-font-size">You can <strong>use coconut oil</strong> instead of melted butter for an even swap! Make sure to use refined coconut oil so the cookies don&#8217;t have a strong coconut flavor. You can also try using a vegan butter if you are dairy free. </p>



<p class="has-large-font-size">Also, if you don&#8217;t have coconut sugar, <strong>use brown sugar</strong> or <strong>regular white sugar</strong> for an even swap. </p>

<p class="has-large-font-size">Once these cookies have fully cooled, store them in an airtight container in the fridge. They will last in the fridge for 4-5 days. Alternatively, they can be stored in the freezer for 3 months! Simply store the cookies in a freezer friendly container and then let them thaw out at room temperature when you are ready to enjoy them.</p>

<p class="has-normal-font-size">Gluten free pecan sandies bring back <em>SO</em> many childhood memories. </p>



<p class="has-normal-font-size">Snack time was always one of the many highlights in elementary school days. It meant free time, time to chat with friends, and of course, compare snacks. </p>



<p class="has-normal-font-size">My mom would always pack me cookies and fruit for my school snack. I&#8217;m not sure why it was always this combination but I loved it. It&#8217;s all about balance right? </p>



<p class="has-normal-font-size">The cookies she packed me always changed so, it was always a fun surprise when snack time rolled around. </p>



<p class="has-normal-font-size">It was always a great day when I reached into my lunch bag and pulled pecan sandies!</p>



<p class="has-normal-font-size">Fast forward 20 years, I knew I wanted to recreate this cookie into my own (more wholesome) recipe. And this cookie recipe is just that!</p>

<p class="has-normal-font-size">Pecan sandies have a buttery short bread base and are loaded with crunchy pecans. These cookies have a crispy outside and soft middles that melt in your mouth. They are made with almond flour so they are naturally gluten free!</p>

<p class="has-normal-font-size">The below ingredients are used as the base of these cookies (before we fold in the pecans!).</p>



<ul class="has-normal-font-size wp-block-list"><li><strong>Butter</strong>, softened to room temperature.</li><li><strong>Powdered sugar</strong> will be used as the sweetener.</li><li>A splash of<strong> almond milk</strong> to add moisture.</li><li><strong>Vanilla</strong> helps enhance the flavor of these cookies!</li><li><strong><a href="https://www.amazon.com/Blue-Diamond-Almond-Gluten-Blanched/dp/B07L9Q45HG/ref=sr_1_4?dchild=1&amp;keywords=almond+flour&amp;qid=1629937948&amp;s=grocery&amp;sr=1-4">Almond flour</a></strong> is the main flour used in this recipe.</li><li><strong>Baking soda</strong> will help these cookies rise.</li><li>Just a pinch of <strong>salt!</strong></li></ul>

<ul class="has-normal-font-size wp-block-list"><li><strong>Pecans</strong> of course!</li><li><strong><a href="https://www.amazon.com/Madhava-Organic-Coconut-Sugar-Pound/dp/B00BBDJJL6/ref=sr_1_4?dchild=1&amp;keywords=coconut+sugar&amp;qid=1628278545&amp;s=grocery&amp;sr=1-4">Coconut sugar</a></strong>, or brown sugar will work too.</li><li>Pure <strong><a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">maple syrup</a></strong> is used as a liquid sweetener.</li><li>And a dash of <strong>cinnamon</strong>.</li></ul>

<h2 class="wp-block-heading" id="how-to-make-these-cookies">How to make these cookies</h2>



<p class="has-normal-font-size"><strong>Preheat your oven to 350 degrees</strong>. And line a cookie sheet with parchment paper.</p>



<p class="has-normal-font-size"><strong>Make the candied pecans. </strong>Start off by making the candied pecans so they cool while you make the cookie dough. Add all the candied pecan ingredients in a sauce pan over medium-low heat. Stir consistently for 2-3 minutes until pecans are coated. Remove the pan from the heat and set aside. </p>



<p class="has-normal-font-size"><strong>Make the cookie dough.</strong> Cream together the butter, powdered sugar, almond milk and vanilla in a stand up mixer. Cream until smooth. </p>



<p class="has-normal-font-size"><strong>Add in the dry ingredients.</strong> Add in the almond flour, baking soda and salt. Continue to mix.</p>



<p class="has-normal-font-size"><strong>Fold in the candied pecans</strong>. Use a spoon or spatula. </p>



<p class="has-normal-font-size"><strong>Scoop 12 cookies</strong>. Use a cookie scoop or a spoon and scoop the cookies onto the baking sheet. </p>



<p class="has-normal-font-size"><strong>Bake!</strong> Bake the cookies for 13-15 minutes. Let them cool for 10 minutes and enjoy!</p>

<p>These s&#8217;mores cookies are made from a gluten free chocolate chip cookie batter. Then, by folding in graham cracker pieces and mini marshmallows we will make the perfect s&#8217;mores cookies. </p>



<p>Due to the combination of marshmallows and chocolate, these cookies have a gooey and chewy center. </p>

<h2 class="wp-block-heading">How to make the best healthy butter pecan cookies</h2>



<p><strong>First, you want to make your browned butter so it has time to cool. </strong>Bring the butter to a boil in a small saucepan and keep a close eye on it for browning. You will notice it will start to smell sweet and nutty and you&#8217;ll see brown particles on the bottom on the pan. Once browned, add the butter to a large mixing bowl to cool. Let it cool for at least 10 minutes. </p>



<p><strong>Second, you&#8217;ll want to make the candied pecans.</strong> You can reuse the same saucepan. Add the pecans, butter and sugar over low heat. Stir mixture until the butter has melted and the pecans are coated with the butter and sugar. Turn off the heat and set aside. </p>



<p><strong>Preheat your oven to 350 degrees and line two cookie sheets with parchment paper. </strong></p>



<p><strong>Now, combine the dry ingredients in a medium bowl</strong>: almond flour, oat flour, baking powder, baking soda and salt. Mix and set aside. </p>



<p><strong>And then add the wet ingredients into the large bowl with the cooled browned butter</strong>: egg, coconut sugar, vanilla and apple cider vinegar. Whisk until fully combined. </p>



<p><strong>Pour the dry flour mixture into the wet ingredients. </strong>Mix until almost fully combined. </p>



<p><strong>Then add in the candied pecans. </strong>Mix a few times until fully incorporated. </p>



<p><strong>Finally, scoop the cookie batter onto the baking sheets. </strong>This recipe makes 18 cookies. Bake at 350 for 9-10 minutes. Let the cookies cool slightly before enjoying!</p>

<h2 class="wp-block-heading">Why these healthier browned butter cookies are the best</h2>



<p>There are SO many reasons why I love these cookies. They are easy to make, require minimal wholesome ingredients and they are a total crowd pleaser, just to name a few. </p>



<p>Because this cookies don&#8217;t require any chill time, they can be made in under 20 minutes. They do require a few steps like browning the butter and candying the pecans but thats it! </p>



<p>These cookies are made from a mixture of oat flour and almond flour. I love baking with these flours as they are wholesome and each only made with one ingredient. </p>



<p>I love using <strong>almond flour</strong> in baked goods. It is only made with one ingredient: ground almonds! Which makes it a healthy alternative from traditional flour. It is lower in carb and higher in fat content than traditional flour but it also has many other nutrients like vitamin E and magnesium!&nbsp;</p>



<p>I love baking with <strong>oat flour</strong>. Finely ground oat flour makes perfectly chewy and fluffy baked goods. And it only has one ingredient: ground oats!&nbsp;</p>



<p>Lastly, these cookies are a total crowd pleaser. We almost ate the whole batch before sharing them with our friends lol! This recipe makes 18 cookies. </p>
