Peanut Butter Oatmeal Cookies (Gluten Free)
Peanut butter oatmeal cookies are made from a mixture of blanched almond flour and oats! They are loaded with creamy peanut butter making them soft, chewy and absolutely delicious.

- 2 eggs room temperature
- ⅔ cup coconut sugar OR brown sugar
- ⅔ cup natural creamy peanut butter
- ½ cup butter OR light oil melted and cooled
- 1 tsp vanilla
- 2 cups almond flour
- ¾ cup quick oats or gluten free oats
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup chocolate chips
Preheat the oven to 350 degrees. And line two baking sheets with parchment paper.
In a large bowl, whisk the eggs and sugar until smooth. Then add the peanut butter, butter and vanilla. Continue to whisk until smooth.
Now add in the almond flour, oats, baking powder and salt. Mix until combined and smooth.
Mix in the chocolate chips and scoop 24 cookies onto the baking sheets. Lightly press down on each cookie dough ball with your hand or a spatula. The could dough should still be about 1/2 inch thick.
Bake for 12-13 minutes and enjoy!
