Peanut Butter Oatmeal Cookies (Gluten Free)

Peanut butter oatmeal cookies are made from a mixture of blanched almond flour and oats! They are loaded with creamy peanut butter making them soft, chewy and absolutely delicious.

Ingredients

  • 2 eggs room temperature
  • cup coconut sugar OR brown sugar
  • cup natural creamy peanut butter
  • ½ cup butter OR light oil melted and cooled
  • 1 tsp vanilla
  • 2 cups almond flour
  • ¾ cup quick oats or gluten free oats
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees. And line two baking sheets with parchment paper.
  • In a large bowl, whisk the eggs and sugar until smooth. Then add the peanut butter, butter and vanilla. Continue to whisk until smooth.
  • Now add in the almond flour, oats, baking powder and salt. Mix until combined and smooth.
  • Mix in the chocolate chips and scoop 24 cookies onto the baking sheets. Lightly press down on each cookie dough ball with your hand or a spatula. The could dough should still be about 1/2 inch thick.
  • Bake for 12-13 minutes and enjoy!
