Ingredients

  • 6 english muffins regular, whole grain or gluten free
  • 6 eggs
  • 6-12 pieces prosciutto depending how many you want per sandwich
  • 1 cup arugula
  • 6 slices provolone cheese
  • butter optional for spreading on english muffins

Instructions

  • Firstly, bake the prosciutto. Preheat your oven to 400 degrees and line a baking sheet with parchment paper. Add the prosciutto to the pan in a loose ball or nest form. Bake for 10 minutes.
  • In a pan on the stove, cook the eggs to your liking.
  • Toast the english muffins to your liking! And butter them if you choose.
  • Grab one side of the english muffin and layer the egg, prosciutto, arugula, and provolone cheese. Add the other half of the english muffin on top.
