  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 egg
  • 1 cup almond milk
  • 1/2 cup coconut sugar
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil or applesauce
  • 1 tsp lemon juice or ACV
  • powdered sugar for tossing about 1/3 cup

Instructions

  • Preheat your oven to 350 degrees. Grease two mini muffin pans with cooking spray.
  • In a medium bowl, combine the oat flour, cocoa powder, baking powder, and baking soda. Mix and set aside.
  • In a large bowl, whisk the egg, almond milk, coconut sugar, maple syrup and coconut oil. Whisk until fully combined. Then, fold in the dry flour ingredients just until combined.
  • Using a spoon, spoon the batter into the mini muffin pans. It should fill between 40-45 mini muffins. Bake at 350 for 20 minutes.
  • Let the donut holes cool for 15 minutes before removing them from the pan. Add the powdered sugar to a bowl and toss in the cooled donut holes until coated. You can also brush the donut holes with butter or coconut oil before tossing them in the sugar. Enjoy!
