- 1 egg room temperature, this will allow the egg to mix nicely into the batter
- 1 ½ cups milk or almond milk, warmed or brought to room temperature
- ¼ cup butter melted, or light oil (canola oil, coconut oil, or light olive oil)
- 1 tbsp vanilla extract
- 2 cups white whole wheat flour
- ¼ cup sugar
- 1 tbsp baking powder
In a large bowl whisk the egg, milk, melted butter and vanilla. (Slightly warm the milk in the microwave for 15-20 second so it doesn't solidify the melted butter)
Now fold in the dry ingredients: flour, sugar and baking powder. Don't over mix! Some clumps are good!
Let the batter sit while you preheat your skillet. Letting the batter sit will result in lighter and fluffier pancakes!
Preheat your pan on the stove over medium/low heat. And grease the pan with cooking spray, butter or oil. Adding butter or oil makes for crispy outsides!
Add the batter to the pan and flip each pancake when the top starts to bubble and the bottom is a golden brown. You will likely have to cook in batches unless you have a large cook top! Repeat until all the batter is gone.
Add all of your favorite toppings and enjoy!
