Granola Recipe with Chocolate and Peanut Butter

This granola recipe is loaded with chocolate and peanut butter. It makes large crunchy clusters and is loaded with oats, nuts, and cocoa powder. Ingredients

  • 2 ½ cups oats or gluten free oats
  • 1 cup peanuts
  • ½ cup chocolate chips
  • ¼ cup chia seeds
  • ¼ cup cocoa powder
  • ¼ cup coconut sugar
  • ½ cup honey
  • ½ cup creamy peanut butter
  • 1 tbsp water
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  • Preheat your oven to 300 degrees and line a large cookie sheet with parchment paper.
  • In a large bowl, add the oats, peanuts, chocolate chips, chia seeds, cocoa powder and coconut sugar. Mix until combined.
  • In a microwave safe bowl, add the honey, creamy peanut butter, water, salt and vanilla. Stir together. Microwave for 15 second and give it a good stir. Microwave again for another 15 seconds and stir. You want the mixture to be runny so it is easy to mix into the dry ingredients.
  • Pour the peanut butter mixture into the large bowl with the oat mixture. Make sure to use a very large bowl so it is easy to mix! Mix until fully combined and everything is coated. Use your hands if needed. It may take a minute or two to combine.
  • Dump the mixture onto your prepared cooking sheet. Pat it down flat with a spoon or spatula to form an even layer. (If it seems a little dry that's ok, it will stick together as you pat it down to form an even layer)
  • Bake for 18 minutes. Turn off the oven and let the pan sit in the warm oven for an hour. Remove the pan from the oven and let it cool for another hour. You want the granola to cool fully. This helps to make chunky granola!
  • Once the granola has fully cooled, break it up into chunks with your hands. Enjoy!
  • Store the remaining granola in an airtight container in the fridge for 3-4 days.
