- ½ cup coconut butter melted
- ½ cup shredded coconut finely chopped, unsweetened
- 5 pitted dates soaked in hot water for 10 minutes
- ½-¾ cup chocolate chips
- flaked sea salt
In a small bowl, add the dates and cover them with hot water. Let them sit for 10 minutes or longer. (We will be using 2 tbsp of the 'date water' so don't pour it out!)
After 10 minutes of soaking, add the dates plus 2 tbsp of water to a high speed blender. Blend until a smooth paste forms.
In a medium bowl, add the melted coconut butter, finely chopped coconut and date paste. Mix until fully combined.
Using your hands form the mixture into 10 log shaped pieces. Place them on a plate and allow them to set in the freezer for 1 hour.
Now, melt the chocolate chips in a microwave safe bowl. I like to microwave them in 15 second increments stirring after each time until fully melted.
Dip each coconut candy in the melted chocolate until completely covered and sprinkle the top with sea salt. Place them back in the fridge to set.
Once the chocolate has harden, enjoy!
