Healthy Paleo Banana Bread (Unsweetened, Gluten Free)
Use up your ripe bananas and make this delicious, naturally sweetened, paleo and gluten free banana bread. This banana bread is only sweetened with bananas making it refined sugar free.

- 1 ½ cup almond flour
- ¼ cup tapioca flour
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 tsp cinnamon
- 3 eggs
- 1 cup banana mashed
- ¼ cup coconut oil melted
Preheat your oven to 350 degrees and grease a loaf pan with cooking spray and line it with parchment paper.
In a medium bowl, mix together all your dry ingredients: almond flour, tapioca flour, baking powder, baking soda and cinnamon. Mix and set aside.
In a large bowl, whisk together the eggs, mashed banana and coconut oil. Whisk until fully combined.
Now, pour the dry flour ingredients into the wet mixture and fold just until combined.
Pour the batter into your prepared loaf pan and baked for 45-50 minutes. I used a 3.5x7.5 loaf pan. If you are using a larger loaf pan, keep in mind that your baking time will be less!
Let the banana bread cool slightly before removing it from the pan. Slice and enjoy!
